Ingredients

  • Kale - 150 grams, chopped
  • Chickpeas - 1 cup, cooked and drained
  • Parmesan cheese - 30 grams, grated
  • Whole grain croutons - 1 cup
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Worcestershire sauce - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Spread the chickpeas on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the oven for 10-12 minutes until crispy.
  3. In a bowl, whisk together the remaining olive oil, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and pepper to create the dressing.
