- Kale - 100 grams, chopped
- White beans (canned) - 240 grams, drained and rinsed
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the chopped kale to the pot and sauté for another 3-4 minutes until it begins to wilt.
- Pour in the vegetable broth, then add the white beans, bay leaf, thyme, salt, and black pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
- Remove the bay leaf, stir in the lemon juice, and adjust the seasoning if necessary.
