  • Kale - 100 grams, chopped
  • White beans (canned) - 240 grams, drained and rinsed
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the chopped kale to the pot and sauté for another 3-4 minutes until it begins to wilt.
  4. Pour in the vegetable broth, then add the white beans, bay leaf, thyme, salt, and black pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
  6. Remove the bay leaf, stir in the lemon juice, and adjust the seasoning if necessary.
