Ingredients

  • Kale - 150 grams, chopped
  • Quinoa - 100 grams, rinsed
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 100 grams, diced
  • Almonds - 30 grams, sliced
  • Feta cheese - 50 grams, crumbled (optional)
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the quinoa under cold water and cook it in a saucepan with 200 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  2. While the quinoa is cooking, massage the chopped kale with a pinch of salt in a large bowl for about 1-2 minutes until it becomes tender.
  3. In a separate bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.
  4. Once the quinoa is cooked, let it cool slightly before adding it to the bowl with the kale.
  5. Add the cherry tomatoes, cucumber, and sliced almonds to the salad bowl, then drizzle the dressing over the top.
  6. Toss everything gently until well combined. If using, sprinkle crumbled feta cheese on top before serving.
