Ingredients

  • Kale - 100 grams, chopped
  • Quinoa - 100 grams, rinsed
  • Chickpeas - 200 grams, cooked and drained
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Avocado - 1, sliced
  • Tomato - 1, sliced
  • Lettuce - 2 leaves

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes to thicken.
  3. Cook the quinoa according to package instructions, typically by boiling it in water for about 15 minutes until fluffy.
  4. In a large mixing bowl, combine the cooked quinoa, chopped kale, chickpeas, red onion, garlic, cumin, paprika, salt, black pepper, and the flaxseed mixture. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  5. Form the mixture into 2 burger patties.
  6. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  7. Transfer the patties to a baking sheet and bake in the preheated oven for another 10 minutes to ensure they are heated through.
  8. To serve, place each patty on a whole grain bun and top with avocado slices, tomato, and lettuce.
