- Kale - 100 grams, chopped
- Quinoa - 100 grams, rinsed
- Chickpeas - 200 grams, cooked and drained
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce - 2 leaves
Steps
- Preheat your oven to 180°C (350°F).
- In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes to thicken.
- Cook the quinoa according to package instructions, typically by boiling it in water for about 15 minutes until fluffy.
- In a large mixing bowl, combine the cooked quinoa, chopped kale, chickpeas, red onion, garlic, cumin, paprika, salt, black pepper, and the flaxseed mixture. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into 2 burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
- Transfer the patties to a baking sheet and bake in the preheated oven for another 10 minutes to ensure they are heated through.
- To serve, place each patty on a whole grain bun and top with avocado slices, tomato, and lettuce.
