- Jerk seasoning - 2 tablespoons
- Olive oil - 1 tablespoon
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Rice - 150 grams (uncooked)
- Chicken broth - 300 ml
- Red bell pepper - 1/2, diced
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a bowl, combine jerk seasoning, olive oil, lime juice, minced garlic, and grated ginger to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- While the chicken is marinating, rinse the rice under cold water until the water runs clear.
- In a medium saucepan, bring the chicken broth to a boil and add the rinsed rice. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and liquid is absorbed.
- In the last 10 minutes of rice cooking, preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and season with salt and black pepper. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
- Once the chicken is done, let it rest for a few minutes before slicing.
- Fluff the cooked rice with a fork and stir in the diced red bell pepper and chopped green onions.
- Serve the grilled jerk chicken over the rice, garnished with fresh cilantro.
