Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Jerk seasoning - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Taco shells - 4 small (corn or flour)
  • Avocado - 1 medium, sliced
  • Mango - 1 medium, diced
  • Red onion - 1/4 cup, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. In a bowl, combine the chicken thighs with jerk seasoning, olive oil, and a pinch of salt. Let marinate for at least 15 minutes.
  2. Preheat a grill or skillet over medium heat. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C.
  3. While the chicken is cooking, prepare the mango salsa by mixing diced mango, red onion, cilantro, lime juice, and a pinch of salt in a separate bowl. Set aside.
  4. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes before slicing it into strips.
  5. Warm the taco shells in the oven or on a skillet for about 2 minutes until pliable.
  6. Assemble the tacos by placing sliced jerk chicken into each taco shell, topping it with the mango salsa and avocado slices.
