- Chicken breast - 400 grams
- Green bell pepper - 1 medium
- Red onion - 1 medium
- Olive oil - 2 tablespoons
- Garlic cloves - 3, minced
- Fresh thyme - 1 teaspoon, chopped
- Scotch bonnet pepper - 1, deseeded and finely chopped
- Brown sugar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Allspice - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
- In a separate bowl, mix together the olive oil, minced garlic, fresh thyme, scotch bonnet pepper, brown sugar, soy sauce, lime juice, allspice, cinnamon, salt, and black pepper to create the marinade.
- Pour the marinade over the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- While the chicken is marinating, chop the green bell pepper and red onion into 2.5 cm chunks.
- After marinating, preheat your grill or BBQ to medium-high heat.
- Thread the marinated chicken cubes, bell pepper, and red onion onto the skewers, alternating between the chicken and vegetables.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
