Ingredients

  • Chicken breast - 400 grams
  • Green bell pepper - 1 medium
  • Red onion - 1 medium
  • Olive oil - 2 tablespoons
  • Garlic cloves - 3, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Scotch bonnet pepper - 1, deseeded and finely chopped
  • Brown sugar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Allspice - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, mix together the olive oil, minced garlic, fresh thyme, scotch bonnet pepper, brown sugar, soy sauce, lime juice, allspice, cinnamon, salt, and black pepper to create the marinade.
  3. Pour the marinade over the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  4. While the chicken is marinating, chop the green bell pepper and red onion into 2.5 cm chunks.
  5. After marinating, preheat your grill or BBQ to medium-high heat.
  6. Thread the marinated chicken cubes, bell pepper, and red onion onto the skewers, alternating between the chicken and vegetables.
  7. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  8. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
