  • Andouille sausage, sliced - 100 grams
  • Shrimp, peeled and deveined - 100 grams
  • Bell pepper, diced - 1 medium
  • Onion, diced - 1 medium
  • Celery, diced - 1 stalk
  • Garlic, minced - 2 cloves
  • Diced tomatoes (canned) - 200 grams
  • Chicken broth - 2 cups
  • Olive oil - 2 tablespoons
  • Cajun seasoning - 1 tablespoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Green onion, sliced - for garnish

Steps

  1. In a medium saucepan, bring 2 cups of chicken broth to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and celery. Sauté for 5 minutes until the vegetables are softened.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  4. Stir in the diced chicken breast and sausage slices. Cook until the chicken is browned and fully cooked, about 5-7 minutes.
  5. Add the shrimp, diced tomatoes, Cajun seasoning, bay leaf, salt, and black pepper to the skillet. Stir to combine and let it simmer for 5 minutes until the shrimp are cooked through.
  6. Remove the bay leaf from the skillet and adjust seasoning if necessary.
  7. Fluff the cooked rice with a fork and divide it into two bowls. Top each bowl with the jambalaya mixture.
