- Jalapeños - 4 large
- Raw cashews - 100 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almond milk - 2 tablespoons
- Panko breadcrumbs - 1/4 cup
- Olive oil - 1 tablespoon
Steps
- Soak the raw cashews in water for at least 2 hours, then drain and rinse.
- Preheat the oven to 200°C (400°F).
- Slice the jalapeños in half lengthwise and remove the seeds and membranes for less heat.
- In a blender or food processor, combine the soaked cashews, nutritional yeast, garlic powder, onion powder, lemon juice, salt, black pepper, and almond milk. Blend until smooth and creamy.
- Fill each jalapeño half with the cashew mixture using a spoon or piping bag.
- In a small bowl, mix the panko breadcrumbs with olive oil until well combined.
- Sprinkle the breadcrumb mixture generously over the filled jalapeños.
- Place the jalapeño poppers on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes or until the tops are golden brown and crispy.
