Ingredients

  • Jalapeños - 4 large
  • Raw cashews - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almond milk - 2 tablespoons
  • Panko breadcrumbs - 1/4 cup
  • Olive oil - 1 tablespoon

Steps

  1. Soak the raw cashews in water for at least 2 hours, then drain and rinse.
  2. Preheat the oven to 200°C (400°F).
  3. Slice the jalapeños in half lengthwise and remove the seeds and membranes for less heat.
  4. In a blender or food processor, combine the soaked cashews, nutritional yeast, garlic powder, onion powder, lemon juice, salt, black pepper, and almond milk. Blend until smooth and creamy.
  5. Fill each jalapeño half with the cashew mixture using a spoon or piping bag.
  6. In a small bowl, mix the panko breadcrumbs with olive oil until well combined.
  7. Sprinkle the breadcrumb mixture generously over the filled jalapeños.
  8. Place the jalapeño poppers on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 20 minutes or until the tops are golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.
