  • cornmeal - 120 grams
  • all-purpose flour - 60 grams
  • baking powder - 1 tablespoon
  • sugar - 1 tablespoon
  • salt - 1/2 teaspoon
  • milk - 180 ml
  • vegetable oil - 2 tablespoons
  • large egg - 1
  • fresh jalapeños - 2, finely chopped
  • cheddar cheese - 60 grams, shredded

Steps

  1. Preheat the oven to 200°C (400°F) and grease a small baking dish (approximately 20cm x 20cm).
  2. In a mixing bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped jalapeños and shredded cheddar cheese until evenly distributed.
  6. Pour the batter into the prepared baking dish and smooth the top.
