- Breadcrumbs - 1/2 cup
- Black beans - 1/2 cup (cooked and drained)
- Egg - 1 large
- Cilantro - 2 tablespoons (chopped)
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 (whole wheat recommended)
- Avocado - 1 small (sliced)
- Lettuce - 2 leaves
- Tomato - 1 small (sliced)
Steps
- In a mixing bowl, mash the black beans with a fork until mostly smooth.
- Add the sweet corn, chopped jalapeño, breadcrumbs, egg, cilantro, cumin, salt, and black pepper to the mashed beans. Mix until well combined.
- Form the mixture into two equal patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, until golden brown and heated through.
- While the patties are cooking, toast the burger buns in a separate pan or toaster until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the corn patty, sliced avocado, and tomato. Top with the other half of the bun.
