- young green jackfruit - 400 grams, drained and rinsed
- olive oil - 2 tablespoons
- garlic powder - 1 teaspoon
- onion powder - 1 teaspoon
- smoked paprika - 1 teaspoon
- cayenne pepper - 1/4 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- vegan mayonnaise - 4 tablespoons
- Dijon mustard - 1 tablespoon
- lemon juice - 1 tablespoon
- fresh parsley - 2 tablespoons, chopped
- French baguette - 2 pieces (about 15 cm each)
- shredded lettuce - 1 cup
- sliced tomatoes - 1 medium
- sliced pickles - 1/2 cup
Steps
- Heat olive oil in a medium skillet over medium heat.
- Add the drained and rinsed jackfruit to the skillet and cook for about 5 minutes, stirring occasionally.
- Sprinkle in the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to coat the jackfruit evenly and cook for an additional 10 minutes until softened.
- Using a fork, shred the jackfruit to resemble pulled meat, and cook for another 5 minutes to allow flavors to meld.
- In a small bowl, mix together the vegan mayonnaise, Dijon mustard, lemon juice, and chopped parsley to create the remoulade.
- Slice the French baguettes in half and lightly toast them if desired.
- Spread a generous amount of the remoulade on both sides of each baguette.
- Layer the shredded jackfruit, shredded lettuce, sliced tomatoes, and pickles inside the baguettes.
- Close the sandwiches and serve immediately, with extra remoulade on the side if desired.
