- Lime juice - 1 tablespoon
Steps
- Preheat the oven to 220°C (425°F).
- In a mixing bowl, combine almond flour, ground flaxseed, olive oil, water, and salt to form a dough.
- Press the dough into a 10-inch round pizza crust on a baking sheet lined with parchment paper.
- Bake the crust for 10 minutes until slightly golden.
- While the crust is baking, in a skillet over medium heat, sauté the red onion in a little olive oil until translucent, about 3-4 minutes.
- Add the corn, black beans, zucchini, cumin, and chili powder to the skillet, stirring gently until heated through, about 5 minutes.
- Remove the crust from the oven and spread the vegetable mixture evenly on top.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Remove from the oven and drizzle with lime juice and sprinkle with fresh cilantro before serving.
