- Cornmeal - 1 cup
- All-purpose flour - 1/4 cup
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Ground black pepper - 1/4 tsp
- Garlic powder - 1/2 tsp
- Onion powder - 1/2 tsp
- Fresh chives, chopped - 2 tbsp
- Plant-based milk - 3/4 cup
- Apple cider vinegar - 1 tbsp
- Vegetable oil (for frying) - 2 cups
Steps
- In a small bowl, mix the plant-based milk and apple cider vinegar. Let it sit for 5 minutes to create a buttermilk substitute.
- In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, black pepper, garlic powder, onion powder, and chopped chives.
- Pour the buttermilk mixture into the dry ingredients and stir until just combined. Do not overmix; the batter should be thick and slightly lumpy.
- Heat vegetable oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
- Using a spoon or small ice cream scoop, carefully drop tablespoon-sized portions of the batter into the hot oil. Fry in batches to avoid overcrowding the pan.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
