Ingredients

  • Cornmeal - 1 cup
  • All-purpose flour - 1/4 cup
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Ground black pepper - 1/4 tsp
  • Garlic powder - 1/2 tsp
  • Onion powder - 1/2 tsp
  • Fresh chives, chopped - 2 tbsp
  • Plant-based milk - 3/4 cup
  • Apple cider vinegar - 1 tbsp
  • Vegetable oil (for frying) - 2 cups

Steps

  1. In a small bowl, mix the plant-based milk and apple cider vinegar. Let it sit for 5 minutes to create a buttermilk substitute.
  2. In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, black pepper, garlic powder, onion powder, and chopped chives.
  3. Pour the buttermilk mixture into the dry ingredients and stir until just combined. Do not overmix; the batter should be thick and slightly lumpy.
  4. Heat vegetable oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
  5. Using a spoon or small ice cream scoop, carefully drop tablespoon-sized portions of the batter into the hot oil. Fry in batches to avoid overcrowding the pan.
  6. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.
