Ingredients
- chickpeas - 1 cup (240g)
- cooked quinoa - 1/2 cup (90g)
- carrot, grated - 1 medium (60g)
- red bell pepper, finely chopped - 1/2 (75g)
- onion, finely chopped - 1/4 medium (40g)
- garlic, minced - 2 cloves
- hummus - 1/2 cup (120g)
- ground cumin - 1 tsp
- ground coriander - 1/2 tsp
- salt - 1/2 tsp
- black pepper - 1/4 tsp
- all-purpose flour - 1/4 cup (30g)
- olive oil - 2 tbsp (30ml)
- burger buns - 2
- lettuce leaves - 2
- sliced tomato - 1 medium
- sliced cucumber - 1/2 medium
Steps
- Rinse and drain the chickpeas, then mash them in a large bowl until mostly smooth.
- Add the cooked quinoa, grated carrot, chopped red bell pepper, chopped onion, minced garlic, hummus, ground cumin, ground coriander, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Gradually add the all-purpose flour and mix until the mixture holds together. If it's too wet, add a bit more flour.
- Form the mixture into two burger patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, toast the burger buns lightly in another skillet with the remaining olive oil, if desired.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the veggie patties, sliced tomato, and sliced cucumber. Top with additional hummus if desired.
