- granulated sugar - 100 grams
- baking powder - 1 teaspoon

- ground cinnamon - 1/2 teaspoon
- salt - 1/4 teaspoon
- ripe banana - 1 medium, mashed
- canned crushed pineapple - 100 grams, drained
- vegetable oil - 60 ml
- vanilla extract - 1 teaspoon
- chopped walnuts - 30 grams
- powdered sugar - 50 grams
- coconut milk - 30 ml
Steps
- Preheat your oven to 175°C (350°F) and grease two small cake pans (about 15 cm in diameter).
- In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt. Stir well to combine.
- In another bowl, mix the mashed banana, drained crushed pineapple, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts gently.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
