  • granulated sugar - 100 grams
  • baking powder - 1 teaspoon
  • baking soda - 1/2 teaspoon
  • ground cinnamon - 1/2 teaspoon
  • salt - 1/4 teaspoon
  • ripe banana - 1 medium, mashed
  • canned crushed pineapple - 100 grams, drained
  • vegetable oil - 60 ml
  • vanilla extract - 1 teaspoon
  • chopped walnuts - 30 grams
  • powdered sugar - 50 grams
  • coconut milk - 30 ml

Steps

  1. Preheat your oven to 175°C (350°F) and grease two small cake pans (about 15 cm in diameter).
  2. In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt. Stir well to combine.
  3. In another bowl, mix the mashed banana, drained crushed pineapple, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts gently.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
