  • Canned black beans - 1 cup (240g), drained and rinsed
  • Diced tomatoes - 1 cup (240g)
  • Red onion - 1/2 cup (75g), diced
  • Jalapeño - 1 small, minced
  • Cilantro - 1/4 cup (15g), chopped
  • Olive oil - 1 tablespoon (15ml)
  • Cumin - 1 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Pepper - 1/4 teaspoon (1g)
  • Avocado - 1 small, sliced
  • Lime - 1, cut into wedges

Steps

  1. In a medium skillet, heat olive oil over medium heat. Add the diced red onion and jalapeño. Sauté for about 5 minutes until softened.
  2. Add the diced tomatoes, black beans, cumin, salt, and pepper to the skillet. Stir well and let simmer for 10 minutes, allowing the flavors to meld.
  3. While the sauce is simmering, heat another skillet over medium-high heat. Lightly toast the corn tortillas for about 1-2 minutes on each side until they are warm and slightly crispy. Remove from heat and set aside.
  4. In the same skillet used for the tortillas, crack the eggs and cook them sunny-side up or to your desired doneness, about 3-4 minutes.
  5. To assemble, place a tortilla on each plate, top with the black bean and tomato mixture, and then add two eggs on top. Garnish with chopped cilantro and avocado slices.
  6. Serve immediately with lime wedges on the side.
