- Canned black beans - 1 cup (240g), drained and rinsed
- Diced tomatoes - 1 cup (240g)
- Red onion - 1/2 cup (75g), diced
- Jalapeño - 1 small, minced
- Cilantro - 1/4 cup (15g), chopped
- Olive oil - 1 tablespoon (15ml)
- Cumin - 1 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Pepper - 1/4 teaspoon (1g)
- Avocado - 1 small, sliced
- Lime - 1, cut into wedges
Steps
- In a medium skillet, heat olive oil over medium heat. Add the diced red onion and jalapeño. Sauté for about 5 minutes until softened.
- Add the diced tomatoes, black beans, cumin, salt, and pepper to the skillet. Stir well and let simmer for 10 minutes, allowing the flavors to meld.
- While the sauce is simmering, heat another skillet over medium-high heat. Lightly toast the corn tortillas for about 1-2 minutes on each side until they are warm and slightly crispy. Remove from heat and set aside.
- In the same skillet used for the tortillas, crack the eggs and cook them sunny-side up or to your desired doneness, about 3-4 minutes.
- To assemble, place a tortilla on each plate, top with the black bean and tomato mixture, and then add two eggs on top. Garnish with chopped cilantro and avocado slices.
- Serve immediately with lime wedges on the side.
