  • Onion (diced) - 1 small
  • Green bell pepper (diced) - 1/2
  • Celery (diced) - 1 stalk
  • Garlic (minced) - 2 cloves
  • Vegetable broth - 2 cups
  • Cayenne pepper - 1/4 teaspoon
  • Thyme (dried) - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Green onions (sliced, for garnish) - 2 tablespoons

Steps

  1. In a medium pot, heat the olive oil over medium heat.

  3. Stir in the minced garlic and sauté for an additional minute until fragrant.
  4. Add the rice to the pot and stir to coat the grains with the oil and vegetables.
  5. Pour in the vegetable broth, then add the cooked black-eyed peas, cayenne pepper, thyme, black pepper, and salt. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
