- Black pepper - 1/2 teaspoon
- Fresh basil - 1/4 cup (chopped)
Steps
- Soak the tepary beans in water overnight. Drain and rinse before cooking.
- In a pot, cover the soaked beans with fresh water and simmer for about 1 hour or until tender. Drain and set aside.
- In a mixing bowl, combine the almond flour, eggs, olive oil, sea salt, and black pepper. Mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 15 minutes.
- Roll out the dough into thin sheets using a pasta machine or rolling pin. Cut into tagliatelle strips.
- In a large skillet over medium heat, add a tablespoon of olive oil and sauté the minced garlic for 1 minute until fragrant.
- Add the fresh spinach and cherry tomatoes to the skillet and cook for 3-4 minutes until wilted and softened.
