  • Hopi tepary beans - 1 cup (dry)
  • Zucchini - 1 medium (spiralized)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Cherry tomatoes - 1 cup (halved)
  • Fresh basil - 1/4 cup (chopped)
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the dry Hopi tepary beans under cold water and soak them overnight in a large bowl of water.
  2. The next day, drain the beans and place them in a pot with 3 cups of fresh water. Bring to a boil, then reduce to a simmer and cook for 45-50 minutes until tender. Drain and set aside.
