- Zucchini - 1 medium, julienned
- Red bell pepper - 1 medium, sliced
- Baby spinach - 100 grams
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Cilantro - a handful, chopped
Steps
- Bring a pot of water to a boil and cook the soba noodles according to package instructions (about 4-5 minutes). Drain and rinse with cold water to stop the cooking process.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
- Add the julienned carrot, zucchini, and sliced red bell pepper to the skillet. Stir-fry for about 5-7 minutes, until the vegetables are tender but still crisp.
- Add the cooked soba noodles to the skillet along with the coconut aminos. Toss everything together to combine and heat through for another 2-3 minutes.
- Stir in the baby spinach and cook until wilted, about 1 minute. Remove from heat.
- Serve the noodles topped with chopped green onions, sesame seeds, and fresh cilantro.
