- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Honey - 15 grams
- Salt - 5 grams
- Baking soda - 10 grams
- Egg - 1 (for egg wash)
- Dijon mustard - 30 grams
- Honey (for glaze) - 30 grams
- Olive oil - 10 grams
- Black sesame seeds (optional) - for garnish
Steps
- In a small bowl, combine warm water, honey, and yeast. Let it sit for about 5 minutes until frothy.
- In a mixing bowl, combine flour and salt. Pour the yeast mixture into the flour and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 30 minutes in a warm place.
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large pot, bring 1 liter of water to a boil and add baking soda. While waiting, punch down the dough and divide it into 4 equal pieces.
- Roll each piece into a rope about 30 cm long and shape it into a pretzel.
- Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on the prepared baking sheet.
- In a small bowl, beat the egg and brush the tops of the pretzels with the egg wash.
- Bake the pretzels for 12-15 minutes until golden brown.
- In a separate bowl, mix Dijon mustard with honey and olive oil to create the glaze. Brush it over the warm pretzels and sprinkle with black sesame seeds if desired.
