Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Honey - 15 grams
  • Salt - 5 grams
  • Baking soda - 10 grams
  • Egg - 1 (for egg wash)
  • Dijon mustard - 30 grams
  • Honey (for glaze) - 30 grams
  • Olive oil - 10 grams
  • Black sesame seeds (optional) - for garnish

Steps

  1. In a small bowl, combine warm water, honey, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a mixing bowl, combine flour and salt. Pour the yeast mixture into the flour and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 30 minutes in a warm place.
  4. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  5. In a large pot, bring 1 liter of water to a boil and add baking soda. While waiting, punch down the dough and divide it into 4 equal pieces.
  6. Roll each piece into a rope about 30 cm long and shape it into a pretzel.
  7. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on the prepared baking sheet.
  8. In a small bowl, beat the egg and brush the tops of the pretzels with the egg wash.
  9. Bake the pretzels for 12-15 minutes until golden brown.
  10. In a separate bowl, mix Dijon mustard with honey and olive oil to create the glaze. Brush it over the warm pretzels and sprinkle with black sesame seeds if desired.
