  • Pheasant breasts - 2 pieces (about 300g total)
  • Raw honey - 2 tablespoons (30ml)
  • Apple cider vinegar - 1 tablespoon (15ml)
  • Olive oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Lemon juice - 1 tablespoon (15ml)

Steps

  1. In a small bowl, whisk together honey, apple cider vinegar, olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice to create the marinade.
  2. Place the pheasant breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the pheasant from the marinade, allowing excess to drip off, and discard the marinade.
  5. Grill the pheasant breasts for about 6-7 minutes on each side, or until the internal temperature reaches 74°C (165°F) and they are cooked through.
  6. Once done, remove from the grill and let rest for 5 minutes before slicing.
  7. Serve warm, drizzled with any remaining juices from the grill.
