  • Olive Oil - 1 tablespoon

  • Black Pepper - 1/4 teaspoon
  • Fresh Thyme - 1 teaspoon, chopped (or 1/4 teaspoon dried thyme)
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the carrots and sweet potatoes with olive oil, honey, salt, pepper, and thyme. Toss until the vegetables are well coated.
  3. Spread the vegetables evenly on a baking sheet lined with parchment paper.
  4. Add 2 tablespoons of water to the baking sheet to create steam during baking.
