  • ground ginger - 1 gram
  • salt - 1 gram
  • honey - 60 grams
  • vegetable oil - 30 milliliters
  • large egg - 1
  • milk - 60 milliliters
  • vanilla extract - 5 milliliters
  • chopped walnuts (optional) - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt.
  3. In another bowl, combine the honey, vegetable oil, egg, milk, and vanilla extract, whisking until well mixed.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined; do not overmix.
