Ingredients

  • Gluten-free rolled oats - 1 cup
  • Almonds, chopped - 1/4 cup
  • Walnuts, chopped - 1/4 cup
  • Honey - 1/4 cup
  • Peanut butter - 2 tablespoons
  • Chia seeds - 1 tablespoon
  • Dried cranberries - 1/4 cup
  • Dark chocolate chips - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a small baking dish (approximately 8x8 inches) with parchment paper.
  2. In a large mixing bowl, combine the gluten-free rolled oats, chopped almonds, chopped walnuts, chia seeds, dried cranberries, dark chocolate chips, and salt.
  3. In a small saucepan over low heat, mix together the honey and peanut butter until smooth and well combined.
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Pour the honey and peanut butter mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
  6. Transfer the mixture to the prepared baking dish and press it down firmly with a spatula to create an even layer.
  7. Bake in the preheated oven for about 15 minutes or until the edges are golden brown.
