- Gluten-free rolled oats - 1 cup
- Almonds, chopped - 1/4 cup
- Walnuts, chopped - 1/4 cup
- Honey - 1/4 cup
- Peanut butter - 2 tablespoons
- Chia seeds - 1 tablespoon
- Dried cranberries - 1/4 cup
- Dark chocolate chips - 2 tablespoons
- Salt - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and line a small baking dish (approximately 8x8 inches) with parchment paper.
- In a large mixing bowl, combine the gluten-free rolled oats, chopped almonds, chopped walnuts, chia seeds, dried cranberries, dark chocolate chips, and salt.
- In a small saucepan over low heat, mix together the honey and peanut butter until smooth and well combined.
- Remove the saucepan from heat and stir in the vanilla extract.
- Pour the honey and peanut butter mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
- Transfer the mixture to the prepared baking dish and press it down firmly with a spatula to create an even layer.
- Bake in the preheated oven for about 15 minutes or until the edges are golden brown.
- Remove from the oven and allow to cool completely in the baking dish before cutting into bars.
