Ingredients

  • Firm tofu - 400 grams
  • Hickory wood chips - 1 cup
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Press the tofu for 30 minutes to remove excess moisture, then cut it into 1.5 cm thick slabs.
  2. In a bowl, whisk together the soy sauce, maple syrup, apple cider vinegar, smoked paprika, garlic powder, onion powder, and black pepper.
  3. Place the tofu slabs in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  4. Soak the hickory wood chips in water for 15 minutes, then drain them.
  5. Preheat your grill or smoker to 120°C (250°F). If using a grill, set it up for indirect heat.
  6. Add the soaked hickory wood chips to the smoker box or directly on the coals if using a charcoal grill.
  7. Remove the tofu from the marinade and pat dry. Brush with olive oil on both sides.
  8. Place the tofu slabs on the grill or smoker rack, close the lid, and smoke for 20-25 minutes, flipping halfway through.
  9. Once done, remove the tofu from the grill and let it rest for a few minutes before serving.
