- Firm tofu - 400 grams
- Hickory wood chips - 1 cup
- Soy sauce - 2 tablespoons
- Maple syrup - 1 tablespoon
- Apple cider vinegar - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Press the tofu for 30 minutes to remove excess moisture, then cut it into 1.5 cm thick slabs.
- In a bowl, whisk together the soy sauce, maple syrup, apple cider vinegar, smoked paprika, garlic powder, onion powder, and black pepper.
- Place the tofu slabs in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- Soak the hickory wood chips in water for 15 minutes, then drain them.
- Preheat your grill or smoker to 120°C (250°F). If using a grill, set it up for indirect heat.
- Add the soaked hickory wood chips to the smoker box or directly on the coals if using a charcoal grill.
- Remove the tofu from the marinade and pat dry. Brush with olive oil on both sides.
- Place the tofu slabs on the grill or smoker rack, close the lid, and smoke for 20-25 minutes, flipping halfway through.
- Once done, remove the tofu from the grill and let it rest for a few minutes before serving.
