Ingredients

  • Seitan - 200 grams
  • Hickory wood chips - 1 cup
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Brown sugar - 1 tablespoon
  • Apple cider vinegar - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • BBQ sauce (vegan) - 4 tablespoons

Steps

  1. Soak the hickory wood chips in water for at least 30 minutes.
  2. In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, brown sugar, apple cider vinegar, soy sauce, black pepper, and salt to create a marinade.
  3. Cut the seitan into strips or chunks and add them to the marinade, making sure they are well coated. Let marinate for at least 15 minutes.
  4. Preheat your smoker or a grill with a smoking box to medium heat.
  5. Drain the hickory wood chips and place them in the smoker or in the smoking box of the grill.
  6. Once the smoke begins to rise, add the marinated seitan pieces to the grill or smoker.
  7. Smoke the seitan for about 30-40 minutes, turning occasionally, until it develops a nice smoky color and flavor.
  8. During the last 5 minutes of smoking, brush the seitan with BBQ sauce for a delicious glaze.
  9. Remove the seitan from the grill or smoker and let it rest for a few minutes before serving.
