- Seitan - 200 grams
- Hickory wood chips - 1 cup
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Brown sugar - 1 tablespoon
- Apple cider vinegar - 2 tablespoons
- Soy sauce - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- BBQ sauce (vegan) - 4 tablespoons
Steps
- Soak the hickory wood chips in water for at least 30 minutes.
- In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, brown sugar, apple cider vinegar, soy sauce, black pepper, and salt to create a marinade.
- Cut the seitan into strips or chunks and add them to the marinade, making sure they are well coated. Let marinate for at least 15 minutes.
- Preheat your smoker or a grill with a smoking box to medium heat.
- Drain the hickory wood chips and place them in the smoker or in the smoking box of the grill.
- Once the smoke begins to rise, add the marinated seitan pieces to the grill or smoker.
- Smoke the seitan for about 30-40 minutes, turning occasionally, until it develops a nice smoky color and flavor.
- During the last 5 minutes of smoking, brush the seitan with BBQ sauce for a delicious glaze.
- Remove the seitan from the grill or smoker and let it rest for a few minutes before serving.
