- Zucchini - 1 medium, diced
- Green beans - 100 grams, trimmed and cut into 2 cm pieces
- Vegetable broth - 500 ml
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Fresh basil - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a medium pot over medium heat.
- Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced zucchini and green beans, cooking for an additional 3 minutes.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
