Ingredients

  • Celery stalk - 1, diced
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, diced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Vegetable broth - 500 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh basil - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced zucchini and green beans, cooking for an additional 3 minutes.
  5. Pour in the vegetable broth, bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in the chopped parsley, thyme, and basil, and season with salt and black pepper to taste.
