Ingredients

  • couscous - 1 cup
  • vegetable broth - 1 1/4 cups
  • olive oil - 2 tablespoons
  • zucchini - 1 medium, diced
  • bell pepper - 1 medium, diced
  • carrot - 1 medium, diced
  • garlic - 2 cloves, minced
  • onion - 1 small, diced
  • fresh parsley - 1/4 cup, chopped
  • fresh thyme - 1 tablespoon, chopped
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes to absorb the liquid.
  3. While the couscous is resting, heat olive oil in a large skillet over medium heat.
  4. Add the diced onion and garlic to the skillet, sautéing until translucent, about 3-4 minutes.
  5. Add the diced carrot, zucchini, and bell pepper to the skillet. Cook for an additional 5-7 minutes, until the vegetables are tender.
  6. Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables.
  7. Stir in chopped parsley, thyme, salt, black pepper, and lemon juice. Mix well to combine all ingredients.
  8. Cook for another 2-3 minutes, just until heated through, then serve warm.
