Ingredients

  • Baguette - 1 small (about 200g)
  • Ripe tomatoes - 2 medium (about 250g)
  • Fresh basil - 10g
  • Fresh parsley - 10g
  • Garlic - 1 clove
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the baguette into 1.5 cm thick slices and place them on a baking sheet.
  3. Drizzle the baguette slices with 1 tablespoon of olive oil and toast them in the oven for about 5-7 minutes, or until golden and crispy.
  4. While the bread is toasting, finely chop the tomatoes, basil, and parsley.
  5. In a mixing bowl, combine the chopped tomatoes, basil, parsley, minced garlic, balsamic vinegar, remaining olive oil, salt, and black pepper.
  6. Remove the toasted bread from the oven and let it cool slightly.
