Ingredients

  • Brown rice - 1 cup (200g)
  • Water - 2 cups (480ml)
  • Cherry tomatoes - 1 cup, halved (150g)
  • Cucumber - 1 medium, diced (150g)
  • Red bell pepper - 1 medium, diced (150g)
  • Fresh parsley - 1/4 cup, chopped (15g)
  • Fresh mint - 1/4 cup, chopped (15g)
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Salt - 1/2 teaspoon (2.5g)
  • Black pepper - 1/4 teaspoon (1g)

Steps

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice and a pinch of salt.
  3. Reduce heat to low, cover, and simmer for about 30 minutes or until the rice is tender and water is absorbed.
  4. Remove from heat and let the rice sit for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine the cooked rice, cherry tomatoes, cucumber, red bell pepper, parsley, and mint.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  7. Pour the dressing over the rice salad and toss gently to combine.
  8. Serve chilled or at room temperature.
