- Brown rice - 1 cup (200g)
- Water - 2 cups (480ml)
- Cherry tomatoes - 1 cup, halved (150g)
- Cucumber - 1 medium, diced (150g)
- Red bell pepper - 1 medium, diced (150g)
- Fresh parsley - 1/4 cup, chopped (15g)
- Fresh mint - 1/4 cup, chopped (15g)
- Olive oil - 2 tablespoons (30ml)
- Lemon juice - 1 tablespoon (15ml)
- Salt - 1/2 teaspoon (2.5g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Rinse the brown rice under cold water until the water runs clear.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice and a pinch of salt.
- Reduce heat to low, cover, and simmer for about 30 minutes or until the rice is tender and water is absorbed.
- Remove from heat and let the rice sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine the cooked rice, cherry tomatoes, cucumber, red bell pepper, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the rice salad and toss gently to combine.
- Serve chilled or at room temperature.
