- Vegetable broth - 2 cups

- Shallot - 1, finely chopped
- Carrot - 1, diced
- Bell pepper - 1/2, diced
- Green peas - 1/2 cup, frozen or fresh
- Fresh parsley - 2 tablespoons, chopped
- Fresh basil - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, and sauté until softened, about 2-3 minutes.
- Add the diced carrot and bell pepper to the pan, and cook for an additional 5 minutes until they begin to soften.
- Stir in the rice, allowing it to toast for about 1-2 minutes, then add the vegetable broth, salt, black pepper, and dried oregano. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and stir in the green peas, fresh parsley, fresh basil, and lemon juice. Let sit covered for another 5 minutes.
- Fluff the rice with a fork, adjust seasoning if necessary, and serve hot.
