  • Basmati rice - 1 cup
  • Vegetable broth - 2 cups

  • Shallot - 1, finely chopped
  • Carrot - 1, diced
  • Bell pepper - 1/2, diced
  • Green peas - 1/2 cup, frozen or fresh
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, and sauté until softened, about 2-3 minutes.
  3. Add the diced carrot and bell pepper to the pan, and cook for an additional 5 minutes until they begin to soften.
  4. Stir in the rice, allowing it to toast for about 1-2 minutes, then add the vegetable broth, salt, black pepper, and dried oregano. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and stir in the green peas, fresh parsley, fresh basil, and lemon juice. Let sit covered for another 5 minutes.
  7. Fluff the rice with a fork, adjust seasoning if necessary, and serve hot.
