Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water, and bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
