Ingredients
- Quinoa - 1 cup (200g)
- Water - 2 cups (500ml)
- Fresh parsley, chopped - 1/4 cup (15g)
- Fresh cilantro, chopped - 1/4 cup (15g)
- Garlic, minced - 2 cloves
- Egg - 1 large
- Breadcrumbs - 1/2 cup (50g)
- Olive oil - 2 tablespoons (30ml)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Rinse the quinoa under cold water and then combine it with 2 cups of water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
- Once the quinoa is cooked, remove it from heat and let it cool slightly. Fluff with a fork and transfer to a mixing bowl.
- Add chopped parsley, cilantro, minced garlic, egg, breadcrumbs, salt, black pepper, cumin, and red pepper flakes (if using) to the quinoa. Mix until all ingredients are well combined.
- Form the mixture into small patties or cakes, about 2 inches in diameter.
- Heat olive oil in a skillet over medium heat. Once hot, add the quinoa cakes and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let drain on paper towels before serving.
