Ingredients

  • Quinoa - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Fresh parsley, chopped - 1/4 cup (15g)
  • Fresh cilantro, chopped - 1/4 cup (15g)
  • Garlic, minced - 2 cloves
  • Egg - 1 large
  • Breadcrumbs - 1/2 cup (50g)
  • Olive oil - 2 tablespoons (30ml)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Rinse the quinoa under cold water and then combine it with 2 cups of water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
  2. Once the quinoa is cooked, remove it from heat and let it cool slightly. Fluff with a fork and transfer to a mixing bowl.
  3. Add chopped parsley, cilantro, minced garlic, egg, breadcrumbs, salt, black pepper, cumin, and red pepper flakes (if using) to the quinoa. Mix until all ingredients are well combined.
  4. Form the mixture into small patties or cakes, about 2 inches in diameter.
  5. Heat olive oil in a skillet over medium heat. Once hot, add the quinoa cakes and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and let drain on paper towels before serving.
