Ingredients

  • quinoa - 1/2 cup (90g)
  • water - 1 cup (240ml)
  • olive oil - 1 tablespoon (15ml)
  • onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • carrot - 1 medium, grated
  • fresh parsley - 1/4 cup (15g), chopped
  • fresh cilantro - 1/4 cup (15g), chopped
  • egg - 1 large
  • bread crumbs - 1/2 cup (60g)
  • cumin - 1 teaspoon (2g)
  • salt - 1/2 teaspoon (3g)
  • black pepper - 1/4 teaspoon (1g)
  • avocado - 1 small, sliced (optional for serving)
  • whole wheat burger buns - 2 (for serving)
  • lettuce - 2 leaves (for serving)
  • tomato - 1 small, sliced (for serving)

Steps

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  2. In a skillet over medium heat, heat olive oil. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and grated carrot, and cook for another 2-3 minutes until softened.
  3. In a large bowl, combine cooked quinoa, sautéed onion mixture, parsley, cilantro, egg, bread crumbs, cumin, salt, and black pepper. Mix until well combined.
  4. Form the mixture into 2 patties. In the same skillet, add a little more olive oil if necessary, and cook the patties over medium heat for about 5 minutes on each side until golden brown and heated through.
  5. To serve, place the quinoa burger patties on whole wheat buns, topped with lettuce, tomato slices, and avocado if desired.
