- quinoa - 1/2 cup (90g)
- water - 1 cup (240ml)
- olive oil - 1 tablespoon (15ml)
- onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- carrot - 1 medium, grated
- fresh parsley - 1/4 cup (15g), chopped
- fresh cilantro - 1/4 cup (15g), chopped
- egg - 1 large
- bread crumbs - 1/2 cup (60g)
- cumin - 1 teaspoon (2g)
- salt - 1/2 teaspoon (3g)
- black pepper - 1/4 teaspoon (1g)
- avocado - 1 small, sliced (optional for serving)
- whole wheat burger buns - 2 (for serving)
- lettuce - 2 leaves (for serving)
- tomato - 1 small, sliced (for serving)
Steps
- Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- In a skillet over medium heat, heat olive oil. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and grated carrot, and cook for another 2-3 minutes until softened.
- In a large bowl, combine cooked quinoa, sautéed onion mixture, parsley, cilantro, egg, bread crumbs, cumin, salt, and black pepper. Mix until well combined.
- Form the mixture into 2 patties. In the same skillet, add a little more olive oil if necessary, and cook the patties over medium heat for about 5 minutes on each side until golden brown and heated through.
- To serve, place the quinoa burger patties on whole wheat buns, topped with lettuce, tomato slices, and avocado if desired.
