Ingredients

  • Russet potatoes - 2 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Shredded cheddar cheese - 1/2 cup
  • Fresh parsley - 2 tablespoons, chopped
  • Sour cream - 1/4 cup (for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them several times with a fork.
  3. Rub the potatoes with 1 tablespoon of olive oil and sprinkle with 1/2 teaspoon of salt.
  4. Place the potatoes directly on the oven rack and bake for 40 minutes, or until tender.
  5. Once baked, remove the potatoes from the oven and let them cool for about 10 minutes.
  6. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato around the skin.
  7. Brush the inside of each potato skin with the remaining olive oil and season with the remaining salt, black pepper, thyme, rosemary, and garlic powder.
  8. Return the potato skins to the oven and bake for an additional 10-15 minutes, until crispy.
  9. Sprinkle the shredded cheddar cheese into each skin and bake for an additional 5 minutes, until the cheese is melted.
  10. Remove from the oven, garnish with chopped parsley, and serve hot with sour cream on the side.
