Ingredients

  • Yukon Gold Potatoes - 300 grams
  • Carrots - 100 grams
  • Olive Oil - 2 tablespoons
  • Fresh Rosemary - 1 teaspoon, chopped
  • Fresh Thyme - 1 teaspoon, chopped
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Lemon Juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the Yukon Gold potatoes and carrots thoroughly. Cut the potatoes into 2 cm cubes and the carrots into thin slices.
  3. In a large mixing bowl, combine the potatoes, carrots, olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper. Toss until the vegetables are evenly coated.
  4. Spread the potato and carrot mixture on a baking sheet lined with parchment paper in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through cooking.
  6. Remove from the oven and drizzle with lemon juice before serving.
