- Yukon Gold Potatoes - 300 grams
- Carrots - 100 grams
- Olive Oil - 2 tablespoons
- Fresh Rosemary - 1 teaspoon, chopped
- Fresh Thyme - 1 teaspoon, chopped
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Lemon Juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the Yukon Gold potatoes and carrots thoroughly. Cut the potatoes into 2 cm cubes and the carrots into thin slices.
- In a large mixing bowl, combine the potatoes, carrots, olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper. Toss until the vegetables are evenly coated.
- Spread the potato and carrot mixture on a baking sheet lined with parchment paper in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through cooking.
