- 250g potatoes, peeled and cubed
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped fresh parsley
- 1/4 cup finely chopped green onions
- 1 clove garlic, minced
- 1 large egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons olive oil for frying
Steps
- Boil the cubed potatoes in salted water for about 15 minutes, or until tender. Drain and let cool slightly.
- In a large bowl, mash the boiled potatoes until smooth.
- Add the flour, Parmesan cheese, parsley, green onions, garlic, egg, salt, pepper, and paprika to the mashed potatoes. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each into a patty.
- Heat olive oil in a large skillet over medium heat. Once hot, add the potato cakes and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels before serving warm.
