Ingredients

  • 250g potatoes, peeled and cubed
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup finely chopped green onions
  • 1 clove garlic, minced
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons olive oil for frying

Steps

  1. Boil the cubed potatoes in salted water for about 15 minutes, or until tender. Drain and let cool slightly.
  2. In a large bowl, mash the boiled potatoes until smooth.
  3. Add the flour, Parmesan cheese, parsley, green onions, garlic, egg, salt, pepper, and paprika to the mashed potatoes. Mix until well combined.
  4. Divide the mixture into 4 equal portions and shape each into a patty.
  5. Heat olive oil in a large skillet over medium heat. Once hot, add the potato cakes and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and drain on paper towels before serving warm.
