Ingredients

  • Green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Parsley - 2 tablespoons, fresh, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the rinsed lentils, vegetable broth, bay leaf, and dried thyme. Bring to a boil, then reduce the heat to low and let simmer for 25-30 minutes, or until the lentils are tender.
  5. Remove the bay leaf and stir in the chopped parsley, lemon juice, salt, and black pepper to taste. Adjust seasoning if necessary.
  6. Serve hot, garnished with additional parsley if desired.
