- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Parsley - 2 tablespoons, fresh, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rinsed lentils, vegetable broth, bay leaf, and dried thyme. Bring to a boil, then reduce the heat to low and let simmer for 25-30 minutes, or until the lentils are tender.
- Remove the bay leaf and stir in the chopped parsley, lemon juice, salt, and black pepper to taste. Adjust seasoning if necessary.
- Serve hot, garnished with additional parsley if desired.
