- green lentils - 100 grams
- water - 500 milliliters
- cherry tomatoes - 100 grams, halved
- cucumber - 1 medium, diced
- red onion - 1/4, finely chopped
- fresh parsley - 2 tablespoons, chopped
- fresh mint - 1 tablespoon, chopped
- olive oil - 2 tablespoons
- lemon juice - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
Steps
- Rinse the lentils under cold water and drain.
- In a medium saucepan, combine the lentils and water. Bring to a boil over high heat.
