Ingredients

  • green lentils - 100 grams
  • water - 500 milliliters
  • cherry tomatoes - 100 grams, halved
  • cucumber - 1 medium, diced
  • red onion - 1/4, finely chopped
  • fresh parsley - 2 tablespoons, chopped
  • fresh mint - 1 tablespoon, chopped
  • olive oil - 2 tablespoons
  • lemon juice - 1 tablespoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon

Steps

  1. Rinse the lentils under cold water and drain.
  2. In a medium saucepan, combine the lentils and water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low and simmer uncovered for about 20 minutes, or until the lentils are tender but still hold their shape.
  4. Drain the lentils and set aside to cool.
  5. In a large bowl, combine the cooled lentils, cherry tomatoes, cucumber, red onion, parsley, and mint.
