Ingredients

  • Couscous - 1 cup (150g)
  • Water - 1 1/4 cups (300ml)
  • Olive oil - 1 tablespoon (15ml)
  • Fresh parsley, chopped - 1/4 cup (15g)
  • Fresh mint, chopped - 2 tablespoons (5g)
  • Lemon juice - 1 tablespoon (15ml)
  • Lemon zest - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a medium saucepan, bring the water to a boil over medium heat.
  2. Once boiling, add the couscous, olive oil, salt, and black pepper. Stir quickly and remove from heat.
  3. Cover the saucepan and let it sit for 5 minutes to allow the couscous to absorb the water.
  4. After 5 minutes, fluff the couscous with a fork to separate the grains.
  5. Stir in the chopped parsley, mint, lemon juice, and lemon zest until well combined.
  6. Taste and adjust seasoning if necessary before serving.
