Ingredients
- Couscous - 1 cup (150g)
- Water - 1 1/4 cups (300ml)
- Olive oil - 1 tablespoon (15ml)
- Fresh parsley, chopped - 1/4 cup (15g)
- Fresh mint, chopped - 2 tablespoons (5g)
- Lemon juice - 1 tablespoon (15ml)
- Lemon zest - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a medium saucepan, bring the water to a boil over medium heat.
- Once boiling, add the couscous, olive oil, salt, and black pepper. Stir quickly and remove from heat.
- Cover the saucepan and let it sit for 5 minutes to allow the couscous to absorb the water.
- After 5 minutes, fluff the couscous with a fork to separate the grains.
- Stir in the chopped parsley, mint, lemon juice, and lemon zest until well combined.
- Taste and adjust seasoning if necessary before serving.
