Ingredients

  • Chicken breasts - 2 (about 300g each)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon - 1, juiced and zested
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, parsley, lemon juice, lemon zest, salt, and black pepper to make the marinade.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 15 minutes.
  3. Preheat the oven to 200°C (400°F).
  4. Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade, letting excess drip off, and place it in the hot skillet.
  5. Sear the chicken for about 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 75°C (165°F).
  7. Remove the chicken from the oven and let it rest for 5 minutes before slicing. Serve with your choice of sides.
