- Chicken breasts - 2 (about 300g each)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Lemon - 1, juiced and zested
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, parsley, lemon juice, lemon zest, salt, and black pepper to make the marinade.
- Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 15 minutes.
- Preheat the oven to 200°C (400°F).
- Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade, letting excess drip off, and place it in the hot skillet.
- Sear the chicken for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 75°C (165°F).
- Remove the chicken from the oven and let it rest for 5 minutes before slicing. Serve with your choice of sides.
