Ingredients

  • Water - 1 liter
  • Carrots - 100 grams, diced
  • Celery - 100 grams, diced
  • Onion - 50 grams, chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 20 grams, chopped
  • Fresh thyme - 5 grams, leaves only
  • Fresh rosemary - 5 grams, chopped
  • Bay leaf - 1 leaf
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, bring 1 liter of water to a boil over medium heat.
  2. Add the diced carrots, diced celery, chopped onion, and minced garlic to the boiling water.
  3. Reduce the heat to low and let the vegetables simmer for 15 minutes.
  4. Stir in the chopped parsley, thyme leaves, rosemary, bay leaf, sea salt, and black pepper.
  5. Continue to simmer for an additional 10 minutes to allow the flavors to meld.
  6. Remove from heat, discard the bay leaf, and stir in the lemon juice.
  7. Serve hot, garnished with additional fresh herbs if desired.
