Ingredients

  • Yukon Gold potatoes - 400 grams

  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the Yukon Gold potatoes, then cut them into bite-sized pieces.
  3. In a large mixing bowl, combine the olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper.
  4. Add the cut potatoes to the bowl and toss until they are evenly coated with the herb mixture.
  5. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping halfway through for even cooking.
  7. Remove from the oven and let cool for a couple of minutes before serving.
