Steps
- Preheat the oven to 200°C (400°F).
- In a small bowl, combine the chopped rosemary, thyme, minced garlic, olive oil, salt, and black pepper to create the herb mixture.
- Pat the rack of lamb dry with paper towels and place it on a cutting board, bone side down.
- Spread the Dijon mustard evenly over the meat side of the rack.
- Press the herb mixture onto the mustard-coated meat, ensuring it adheres well and covers the surface.
- Heat a skillet over medium-high heat and add a little olive oil.
- Sear the rack of lamb, meat side down, for about 2-3 minutes until browned, then turn it over and sear the bone side for another minute.

- Roast for 20-25 minutes for medium-rare, or until desired doneness is reached.
- Remove from the oven and let it rest for 5 minutes before slicing between the bones into individual chops.
