Ingredients

  • Cauliflower - 300 grams (for crust)
  • Shredded mozzarella cheese - 150 grams
  • Cream cheese - 50 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Grilled chicken breast - 150 grams, diced
  • Pineapple chunks - 50 grams (fresh or canned in juice)
  • Red onion - 30 grams, thinly sliced
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Steam the cauliflower florets until tender, about 5-7 minutes, then drain thoroughly and let cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice. Squeeze out excess moisture using a clean kitchen towel.
  4. In a mixing bowl, combine the processed cauliflower, shredded mozzarella, cream cheese, almond flour, egg, oregano, garlic powder, salt, and pepper. Mix until a dough forms.
  5. Line a baking tray with parchment paper and spread the cauliflower dough into a round pizza shape, about 1/2 inch thick.
  6. Bake the crust for 25 minutes or until golden brown.
  7. While the crust is baking, heat olive oil in a pan over medium heat and sauté the red onion until translucent, about 3-4 minutes.
  8. Remove the crust from the oven and spread the sautéed onions over it, followed by the diced grilled chicken and pineapple chunks.
  9. Top with remaining mozzarella cheese and return to the oven for another 10-12 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven, let cool slightly, slice, and serve.
