Ingredients
- Cauliflower - 300 grams (for crust)
- Shredded mozzarella cheese - 150 grams
- Cream cheese - 50 grams
- Almond flour - 50 grams
- Egg - 1 large
- Grilled chicken breast - 150 grams, diced
- Pineapple chunks - 50 grams (fresh or canned in juice)
- Red onion - 30 grams, thinly sliced
- Dried oregano - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Steam the cauliflower florets until tender, about 5-7 minutes, then drain thoroughly and let cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice. Squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, combine the processed cauliflower, shredded mozzarella, cream cheese, almond flour, egg, oregano, garlic powder, salt, and pepper. Mix until a dough forms.
- Line a baking tray with parchment paper and spread the cauliflower dough into a round pizza shape, about 1/2 inch thick.
- Bake the crust for 25 minutes or until golden brown.
- While the crust is baking, heat olive oil in a pan over medium heat and sauté the red onion until translucent, about 3-4 minutes.
- Remove the crust from the oven and spread the sautéed onions over it, followed by the diced grilled chicken and pineapple chunks.
- Top with remaining mozzarella cheese and return to the oven for another 10-12 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let cool slightly, slice, and serve.
