Ingredients
- 2 chicken breasts (about 300g each)
- 1 cup pineapple juice
- 1/4 cup low-sodium soy sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 green onions, sliced (for garnish)
- 1/2 cup chopped fresh cilantro (for garnish)
Steps
- In a bowl, whisk together pineapple juice, soy sauce, apple cider vinegar, honey, ginger, garlic, sesame oil, black pepper, and red pepper flakes to make the marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 15 minutes (up to 2 hours for more flavor).
- Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off.
- Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 75°C (165°F).
- While the chicken is grilling, pour the remaining marinade into a small saucepan and bring to a boil over medium heat. Reduce heat and let simmer for 5 minutes to thicken slightly.
- Once the chicken is done, brush some of the thickened sauce over the top and let rest for a few minutes.
- Slice the chicken and serve it drizzled with the remaining sauce, garnished with sliced green onions and chopped cilantro.
