Ingredients

  • all-purpose flour - 250 grams
  • granulated sugar - 50 grams
  • unsalted butter - 100 grams, softened
  • egg - 1 large
  • vanilla extract - 1 teaspoon
  • baking powder - 1 teaspoon
  • salt - 1/4 teaspoon
  • fruit preserves (apricot or raspberry) - 100 grams

Steps

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat your oven to 180°C (350°F).
  7. On a lightly floured surface, roll out the chilled dough to about 5 mm thickness.
  8. Using a round cutter (about 7 cm in diameter), cut out circles from the dough.
  9. Place a teaspoon of fruit preserves in the center of each circle.
  10. Fold the edges of the dough towards the center to form a triangle, pinching the corners to seal.
  11. Place the shaped cookies on a baking sheet lined with parchment paper.
  12. Bake in the preheated oven for 20-25 minutes or until lightly golden.
  13. Allow the cookies to cool on a wire rack before serving.
