Ingredients
- all-purpose flour - 250 grams
- granulated sugar - 50 grams
- unsalted butter - 100 grams, softened
- egg - 1 large
- vanilla extract - 1 teaspoon
- baking powder - 1 teaspoon
- salt - 1/4 teaspoon
- fruit preserves (apricot or raspberry) - 100 grams
Steps
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 180°C (350°F).
- On a lightly floured surface, roll out the chilled dough to about 5 mm thickness.
- Using a round cutter (about 7 cm in diameter), cut out circles from the dough.
- Place a teaspoon of fruit preserves in the center of each circle.
- Fold the edges of the dough towards the center to form a triangle, pinching the corners to seal.
- Place the shaped cookies on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until lightly golden.
- Allow the cookies to cool on a wire rack before serving.
