- Paprika - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Eggs - 4, large
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced red and green bell peppers, and sauté for about 3-4 minutes until they start to soften.
- Stir in the sliced zucchini and diced red onion, cooking for another 3-4 minutes.
- Add the minced garlic, ground cumin, paprika, salt, and black pepper; cook for 1 minute until fragrant.
- Fold in the cherry tomatoes and fresh spinach, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
