  • Cherry tomatoes - 1 cup, halved
  • Fresh spinach - 2 cups
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4, large
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced red and green bell peppers, and sauté for about 3-4 minutes until they start to soften.
  3. Stir in the sliced zucchini and diced red onion, cooking for another 3-4 minutes.
  4. Add the minced garlic, ground cumin, paprika, salt, and black pepper; cook for 1 minute until fragrant.
  5. Fold in the cherry tomatoes and fresh spinach, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
  6. Create four small wells in the vegetable mixture and crack an egg into each well.
  7. Cover the skillet with a lid and cook for 5-7 minutes, or until the eggs are set to your desired doneness.
  8. Remove from heat and top with fresh parsley and crumbled feta cheese if using.
